Postpartum Recipes: Zesty Greek Salad

postpartum recipesAfter a long Minnesota Winter…at last, the sweet sunshine. The arrival of summer BEGS for Mediterranean flavors and dining al fresco. This Greek salad is an old favorite–everyone begs for the recipe. Chock full of goods for Mama as she heals and recovers: leafy greens, vitamin C rich peppers. Add some grilled chicken for protein!

Ingredients:

  • 3 Romaine lettuce hearts, chopped
  • ½ one small red onion, sliced thinly into rings or strips
  • ½ cup roasted red peppers, sliced thin
  • ½ green bell pepper, diced
  • 1 small cucumber, sliced
  • 10-12 grape tomatoes, halved
  • ½ cup whole green olives
  • 1 small can sliced black or Kalamata olives
  • 7-8 pepperoncini
  • 1 cup crumbled feta cheese

Dressing:

Whisk together:

  • ¼ cup extra virgin olive oil
  • ¼ cup fresh lemon juice
  • 1 Tbsp. dry oregano
  • ½ tsp. garlic salt
  • ½ tsp. ground peppercorns

Arrange in whatever lovely way you wish, toss with dressing, serve cold. Leftovers are great tucked into a pita with hummus and/or chicken.  Enjoy!!
